Bienvenidos! Meet Jose Delgado, owner and operator of Los Rolling Tacos food truck.

Food has been a passion of Jose’s since a young age. He grew up in Mexico City, where his early memories of food include visiting his abuela’s (grandmother’s) house for large family gatherings. His many aunts would gather around a table and prepare the ingredients to be used for adobos, salsas and sauces, making homemade tortillas under the direction of his abuela. The uncles prepared the meat—from catching the chicken or to cooking it in an old, traditional fire pit. Jose also worked at an early age selling food at the local market.
In his spare time, Jose entertains friends and family, serving his signature guacamole and salsas. He cooks the recipes from home that remind him of his mother and grandmother, as well as the street food of Mexico City. Jose has always had dreams of opening a restaurant, so after taking cooking classes at George Brown College, he is now ready to share his passion for Mexican food with others. And this is how Los Rolling Tacos was created.
